What is Pesto? Here you go –
I’m following Jamie Oliver’s recipe here. But I have put my own twist to it by replacing roasted pine nuts with roasted cashew nuts, and lemon with lime and olive oil with coconut oil.
Here are the pine nuts I used to make a different batch of Pesto.
Wow it’s amazing.
Zesty, nutty, creamy with an underlying hint of the Parmesan! Whoa.
So delicious, eaten in my avocado shell!
