Happy Easter 🐣🍸Lemongrass Sour🍸

Ingredients

5-7 Thai basil leaves (Fresh from my garden)

1 1/2 ounces gin (London Dry)

¾ ounce lemongrass simple syrup (Lemongrass fresh from my garden)

½ ounce freshly squeezed lime juice

1 egg white

Ice

Lemongrass leaves for garnishing

To Make Lemongrass Simple Syrup

Add 1 cup (100gm) granulated white sugar, 1 cup water and lemongrass pieces into a heavy bottomed pan and simmer until sugar is dissolved. Do not boil. 

Remove from fire and add lemongrass stalks to the syrup. Leave to cool. 

Strain and use in the preparation of the drink.

(2 us tabelspoon = 1 ounce)

Method

1. Chill a coupe glass.

2. In a cocktail shaker, muddle the Thai basil leaves.

3. Add gin, lemongrass simple syrup, lime juice and egg white.

4. Sake to chill.

5. Strain into chilled glass.

Garnish with lemongrass leaves.
